Protein pancakes are a perfect healthy breakfast. Pancakes are my favorite breakfast food. I seriously looove pancakes, but I would rather not eat them everyday (even though I want to)! Normal pancakes are high in carbs and have lots of sugar. Therefore, I decided to come up with something that is healthy for you AND tastes pretty dang amazing.
These protein pancakes are absolutely delicious and nutritious! I make these almost every single morning for breakfast and I never get sick of them. They are light and fluffy like regular pancakes but they don’t have any flour, sugar, oil, or butter! These pancakes contain only five simple ingredients that are packed with protein rich ingredients. This way I feel good about eating them.
Protein pancakes are probably my favorite thing to make in the morning because they are so easy to make and don’t take much time at all! If you have a busy schedule, then these are going to be your best friend. These are even still good the second day, so if you end up not eating all of them (which is not likely) you can just pop them in the microwave later.
Banana Protein Pancakes
Prep Time: 2 minutes
Cook Time: 5 minutes
Total Time: 7 minutes
- 1 Banana
- 2 Eggs
- 1/4 cup oat flour
- 2 Tbsp protein (I use Standard Process unflavored Whey Protein)
- 1 Tsp baking powder
- 1 Tbsp chia seeds (optional)
In a small bowl mash the banana with a fork. Add in eggs, flour, protein, baking powder, and chia seeds. Mix together until consistency is right. Heat pan on medium and oil pan with butter or coconut oil. Pour some batter onto pan and flip once bubbles on pancake pop up. Repeat process until batter is gone. Top with fresh blueberries, bananas and honey. Or whatever toppings you like!
